I've got a template for making sort of envelope things for gift vouchers, so I used a rectangle slightly smaller than that for my vouchers, then used the same font and colour scheme as my logo/name for the wording.
It's quite hard to make a decent looking one, though, I've found, just because a thin rectangle isn't the easiest of shapes to make look nice :)
I'd just recommend playing around with wording and layout and see what looks nice. So far I've been going with a basic '£5' or '£10' or whatever on the far right, the words 'gift voucher' in the same font again, and then wording on the back regarding how they can be used.
