Help choosing correct Schwarzkopf Igora Royal color for resistent grays

Hi, Have not colored hair in one year growing out gray, but do not like the dark salt & pepper look. I colored my own hair using formula hair colorist gave me . I was using 10 grams igora royal 4-0, 5-68, 4-68 to 30 grams of devloper 20%. The color was a bit too red and I would like to go back to a deeper darker brown my original color.Someone suggested I use 5-00 with 30% developer, not sure if it would be too light or flat looking. My gray is resistant very porous thick naturally curly hair about 50% gray with more white hair at temples. I guess i have a couple of questions,
Is the 5-00 color too light brown and flat looking.
Can I mix 5-00 with 4-63? I like the look of igora royal 4-63, but not sure if it would be too red or too dark?
What percentage of develope would I use?
