To remove the gel polish over any sort of enhancement, just buff it off with your e-file or hand file. Alternatively you can soak off with acetone for a few mins, although I don't prefer it, because acetone can affect your enhancements.
Acrylics are generally stronger than gel and suits more people. Occassionally you will find the odd client that doesn't go along with it, while they are fine with gel. Mastering the technique can be a bit trickier at first, since it starts to harden from the moment you mix
You can remove acrylic with 30+ soak off in acetone.
As for gels, there are soak offs and buff offs. Soak offs are considered a little gentler, perhaps not too strong for enhancements (although that strongly depends on the company you go with), but they have an easier removal method
Buff offs are stronger, but it's a hassle getting them off and most people prefer to grow them out.
Application is easier as nothing happens to them before you cure them, so you can move them around until you are happy with the result.
I'd start with acrylics. It's a bit more difficult but suits more people. Try Ink London or CJP. They are cheaper pro companies that you can certainly ditch if you feel you are not getting along with acrylics.
