Commission only or wages and commission? Help!

Hi all,
I'm opening a new salon in August, it's only small with myself (a stylist) and one beautician. I will be looking to take on another stylist in the near future but obviously understand that it will take a while to get off the ground so really didnt want to be worrying about wages if business was slow. Im just looking for some input on how you work your business. Is it wages only, commission only or both? Any advice please?
 
If you want to employ someone and control how they work you have to pay at least national minimum wage so you can’t pay commission only if it works out less than NMW.
If you don’t have enough work for a second stylist but want a second person in situ, you could take someone on, on a self employed basis but you lose any control over them as they’re an independent business owner in your salon.
