For small and very light dappen dishes, you could stabilise them with a bit of bluetac underneath. I don't do this but I do know techs that do x

you should try cnd's small metal dappendishes. they are heavy at the bottom so there is no way that you can knock them over and you don't waste much monomor, really easy to clean + they have a lid that seals the monomor very well. They really are well worth their money and i can tell you that i have tried many different ones.
